The Science of Eternal Honey
It is a fascinating scientific reality that raw honey is essentially immortal. Archaeologists have discovered pots of honey in ancient Egyptian tombs that are thousands of years old and, incredibly, are still perfectly edible. This phenomenon occurs due to a unique combination of factors:
- Low Moisture Content: Honey is naturally hygroscopic, meaning it contains very little water, which prevents bacteria and microorganisms from surviving.
- High Acidity: With a pH level typically between 3 and 4.5, honey creates an environment that is far too acidic for most harmful pathogens to thrive.
- Natural Hydrogen Peroxide: Bees introduce an enzyme called glucose oxidase during the production process, which breaks down into hydrogen peroxide, acting as a powerful natural preservative.
Proper Storage Matters
While honey does not spoil, it can undergo physical changes over time. It may crystallize or change color, which is a completely natural process. To restore crystallized honey to its smooth, liquid state, simply place the jar in a bowl of warm water. Always store honey in a tightly sealed container at room temperature to maintain its pristine quality for a lifetime of enjoyment.
