The Science of Eternal Honey
It is an extraordinary truth that pure, raw honey is essentially immortal. Archaeologists have famously discovered pots of honey in ancient Egyptian tombs that are thousands of years old and still perfectly edible today. This phenomenon is driven by three specific natural factors:
- Low Moisture Content: Honey is naturally hygroscopic, meaning it contains very little water, which prevents bacteria and microorganisms from surviving.
- Acidity: With a pH level typically between 3 and 4.5, honey creates an environment that is far too acidic for most harmful pathogens to thrive.
- Hydrogen Peroxide: During the extraction process, bees add an enzyme called glucose oxidase. This enzyme produces hydrogen peroxide, acting as a natural chemical barrier against spoilage.

To ensure your honey lasts indefinitely, keep it in a tightly sealed glass container in a cool, dry place. If the honey crystallizes, do not worry! This is a natural physical change, not spoilage. Simply place the jar in warm water to restore its liquid consistency.
